The Muffin Man

Soo I’ve been a busy busy lady today. I started the day the Freya way, with a snack (massive haaayyyuuugeee apple, a couple of brazil nuts, a square of chocolate and a few grapes) and a quick 4mile run-

Not too bad! I was originally going to do 3 again, but then I just kinda…forgot to stop!? When I did eventually get in, I did Jillian Level 2 and a bit of stretching, and then got started on breakfast (after giving Chika a kiss of course).

Well folks, I think my cinnamon addiction is being replaced; my secret dream cafe will no longer be named Cinnamon and have cinnamon added to every single dish…nope, it’s now going to be called ….

….

…. GINGER!

Cos today’s breakfast was a) one of the best in rather a long time, and b) 100% ginger based.

I can’t believe I’m even typing that…I spent TWENTY years hating EVERYTHING even remotely ginger flavoured – I even gagged when I had to handle stem ginger whilst making a ginger cake for my grandpa; that’s how much I hated ginger. So who knows what changed!? Anyway – in the mix:

1/2 c. mix of jumbo oats, millet flakes and a bit of wheatbran

1/2 c. soya milk, 3/4 c. water

salt

LOTS of ginger

a squeeze of agave

a tiny pinch of cinnamon

cacao nibs

On the side, I also had some faux-ice cream – a big frozen banana, blended with frozen blackberries, a scoop of Vega chocolate smoothie mix, and a bit of ice and xanthan gum:

After all that excitement, it was down to business: hair washing. Buying Heat magazine. Job searching. I actually spent a somewhat disproportionate amount of my morning job searching – I find it SO frustrating, cos I end up having about 6,789,562 windows open on the Mac, which leads to incredible confusion! I then copy all the useful links / pages into various word documents, THEN I have about a gazillion of them too…plus, I have to keep changing my CV according to what job I’m applying for which means even MORE windows open – never ending!

Bah.

I also had to get my shizzle together for the London Graduate Fair tomorrow – yep, off to London again! There’s a big fair for graduates with the big name employers exhibiting, plus various talks (I want to go to one called ‘what to do if you don’t know what to do’ <— MADE for me!), so I’m gonna hot foot it down there and see what’s what.

In between all the CV changing, printing, ticket sorting-out, horse-kissing and general going-out-of-my-mind feelings, I made the most scrummeh lunch in a LONG time!

I saw on Carrie’s staple Sunday post that there was a recipe for courgette socca (I forget whose it was though! *sorry stranger*). I thought that sounded pretty good, but I didn’t want flat socca, I wanted puffy socca! —>

Chocolate Socca Muffins For One

**Measurements are approximate, cos when I add things like salt, cocoa powder, cinnamon etc I never measure

1/2 c. gram flour / chickpea flour / whatever your land happens to call it

approx. 1 tbsp cocoa powder

1/2 tsp ish baking powder

a pinch of sea salt

approx. 1tsp sugar (yes! Plain old sugar!)

cinnamon to taste

approx. 1/3 c. grated courgette (mine might’ve been nearer 1/2…I’m not certain – I go gungho when I grate)

just under 1/2 c. liquid

Mix all the dry with a whisk. Add in the courgette, and whisk in the liquid – add it in a 1/4c. at a time, so you get a thick pancake batter type consistency.

Pour into 2 greased ramekins (a la Moi!) or into 2 greased muffin…holders?

Bake in a preheated oven at 180 degrees (160 if it’s fan) / 350ish F for abbooouuutt 25mins….again, I didn’t clock watch! I checked after 15mins by stabbing them, and then baked a bit longer – you want them to be pulling away from the sides, well risen, and a knife to come out clean (or there abouts) when you do your stabbing.

Leave to cool for a few minutes, then flip out and enjoy!

Post lunch – a walk with Born To Run (soooo nearly finished it now! I’ll do a review when I do, cos it is an incredible book), I lunged Chika, and did more job application stuff. OHHHH the joys of life. I did randomly get sad when I was working the pony though – I was sitting on the fence, feeding her her treats from the scoop and just running my fingers through her forelock, and it was just so SAD! As much as I want the job situation to be solved, I know it’ll also mean that Chika will need to go, and it breaks my heart. Catch 22!

Dinner was unimaginative, mainly cos I was pretty busy, doing things like emptying my already weak looking bank account of a further £40 for train tickets. Le sigh. I basically had a repeat of breakfast, crossed with a repeat of last night’s dinner:

RIGHT! Back to the grindstone! I need to figure out what to wear tomorrow – it’s Britain, so I should dress for wind, rain, snow, sun, thunder, hail and maybe a hurricane. You never know with English weather…

    WOW £40 for a train fare to London!! Not to rub it in or anything, but mine costs like a fiver…but I hope you find out what ya wanna do!!

    I used to not be a fan of ginger too and then I made a ginger slice….I am NEVER going back to being a ginger hater! (Although I have to say I’ve always been a fan of red heads ;) )

    I just started my new job on Monday and I am a database assistant i.e. I input reports that engineers have gone out and made about bridges into the database. It’s difficult to read what people say sometimes. Sheesh!

    My job is applying for jobs… lol. I’m actually really okay with not having a job. This last school year was killer and really want some downtime in my last summer vacation EVER! And I really want to focus on my ED recovery this summer anyways.

    The muffins look amazing! I started adding ginger to oats a few weeks ago but then I put it away somewhere and I completely forgot about it. I need to dig it out again :D Cinnamon is my big love though. Kovac and I have the same job. I’m just being a lazy bum. To be honest I’m enjoying it a lot haha.

    I am so sooo sorry about you having to maybe, I dare not say, part with Chika… I really feel for you. That’s the reason I couldn’t commit to owning a horse until I am settled down properly somewhere with money in the bank and no intention of moving (don’t know if I’ll ever get there)…breaks my heart just thinking about it.
    On a lighter note…what’s with Kovac and the boot? Love your cat pics ;-)
