Playing With Food

Oohh. It’s Sunday.

Did you all have a good weekend? I had a slightly better day today, thank goodness :) Though my arms are STILL sore from my fall the other day! I think I kind of twisted when I came off, in an attempt to hang onto the reins :s And I have a big bruise on my knee. It’s good to have SOME evidence of my pain; I hate falling off, but having nothing to show for it!! Aaah, fun times :P

So, Sunday, where hath thou gone so quickly??

My day started with some Innocent smoothie, a square of chocolate and a Bapple (I just made that up – I was going to type Big Groovy Apple, but then I though Bapple sounded nicer :P ):

Then, me and Jillian did our workout. THEN, I cheated on her, and worked out with Davina too….I’m bad like that.

For breakfast, I had natural yogurt and Amazake to use up:

For all you people who missed my Amazake-explaining post (I’m sure I did one somewhere down the line :p), it’s made with millet, and…er..that’s about it! It’s a Japanese thing, and it’s very sweet and DELIGHTFUL! I don’t know much about it other than that really :s

ANYWAY, I digress – I mixed yogurt with Amazake:

Then I added in a cup of cereal (Quinoa O’s, Nature’s Path cinnamon/blueberry and All-Bran) and a banana, as well as a granola sprinkle and chopped dates:

Sehr gut. Oh, and I also had a tsp of peanut butter, for some fatty fatty goodness :D

Theeeen, I revised, and went into town – though it was a Ghost Town today, everyone obviously went into hiding cos it’s Sunday!! – I was just stocking up on fruits and veggies, though I did nab some cashew butter while I was there :D

When I got back, I made my luncheons – millet mash! I made it by boiling up half an onion with millet, and cauliflower (& a bit of seasoning).

When it was all soft, I blended it with some spinach. I wasn’t really sure how to serve it to make it pretty…so I played with my food (you’re never too old right?) and made a little castle-y type thing :P

Yummy! The millet mash was not as good as it should have been though, BUT I sense it’s a method with much potential…I’ll be experimenting more…

For dessert, I had a hot cinnamon pear with date syrup, and 2 squares of chocolate :)

Afternoon snackage – a mocha flavour soya yogurt with granola, and a hot chocolate:

Dinner was awesome! And I have this girl to thank :) I discovered her blog today, and not only is she a dirty fellow horse person like me, she has fabulous recipes too! I was inspired by her polenta cranberry creation, so I made my own :D

I started by juicing and zesting an orange. Then, I boiled up some water, OJ, zest, and cranberries:

I then added the polenta, and cooked it til it was a bit firm (3 or 4mins maybe). I poured it into a little dish, then realised I’d forgotten to ad
d cinnamon and basil, so I stirred them in after – look how pretty!

I left it to set :)

With the rest of the juice, I combined it with balsamic, agave, dried cranberries and blubes, cinnamon and garlic, and let a chicken breast marinate in it for a while.

When it came to the cookin’, I cut the polenta into hunky chunks, and fried it with the chicken, along with carrot and garlic and onion:

When it was done, I added in the marinade so it could reduce. I served it all with squash and parsnip, and let me tell ya – IT WAS GOOD!

There was this amazing flavah combo of sweetness, tangy-ness, and then random sharpness from the cranberries…SO GOOD!! The ONLY thing I would have changed would have been cooking my polenta for longer so it was a bit firmer and crispier. But other than that, HOLY YUM!!!!

My evening entertainment today consisted of the study of the eye/hearing/sound and every other boring bit of cognitive psychology you could think of, as well as a tasty dessert of full fat Greek yogurt with a square of dark chocolate and a hot chocolate :)

So, even though Chika was a bad bad BAD pony this weekend, and I am technically still grudging against her, I did take some cute photos in the field today :p

ANNyways, I think that’s me done. I have lots to tonight, mainly work, BUUTT I did buy Zest magazine and marathon running books/magazines, so I want to waste time looking at them too :P YAY!!

What are your favourite magazines? I’m a sucker for Glamour magazine and ANY magazine to do with health/fitness/cookery!! I seriously spend waaaay too much $$$ on it :P

Pride Before Comes Before A Fall…literally!

Oops! Sorry for the lack of a post yesterday – I’ll explain….

Actually – a mega quick backtrack to Thursday’s dessert:

Ok, now onto Friday.

Well, Friday was pretty crap. Woke up fine, I started the day the Freya way with an apple, a square of chocolate and a glass of rice milk (no, I didn’t learn my lesson about the whole ‘don’t-drink-rice milk-before-running-it-gives-you-stomach-cramp’…)…before I set out on a 4mile run, done and done in 32mins :)

When I got back, it was YET AGAIN time for a big Green Monster! You know the drill – Cereal, yogurt, milk, banana, spinach, cocoa powder, topped with dried cranberries and blueberries, granola and tree bark:

Then, my day went downhill :( I was in two minds about whether or not to ride cos the weather looked crummy and I was revising well, but I went for it. Bad idea! Remember my last post? I was banging on about how delightful Chika was? Well, pride really does come before a fall – I fell off! Naughty nasty mare was in a spooky mad mood (damn spring grass!!) and normally I can sit out just about anything on here – bucks, spooks, whip-rounds, you name it, I sit it! – but she did the most HUGE spook-buck-leap EVER, and I came off :( I got up, dusted myself down and made her work her ASS off for 20more minutes, before finishing. When I got inside, my finger cut (which I cut open the other day chopping veg) had re-opened and soaked my glove in blood! It was even on the saddlecloth! Bah.

So needless to say, I was in a bit of a crappy mood :( Then I had a bit (well, a major) anxiety attack mid-day, re exams and being scared, so I was on the phone to my mum for a half hour! She helped a ton, and I felt a bit better :)

Lunch was a super-quick ‘chicken curry’, made with stir fried chicken, garlic and leek. When it was cooked, I added in some natural yogurt with a load of mild korma curry powder:

I served it with a good size helping of durum wheat, cooked with cinnamon and garlic, and mixed with squash and parsnip – delish!!

Then, I had a date…..Ok, it was just with my sister :p

But it was still dinner and a movie, on Date Night! (Btw, who else wants to see that movie like mad!!??)

We ended up getting drinks first (tea in fact. I drank tea!! I liked it!! Gracious.), then went to Old Orleans for a meal (it’s an American style restaurant – http://www.oldorleans.com/home/food). I had the tuna steak salad, with a side of cornbread and veggies, and blue cheese dressing (sorry for the crap photos!):

The cornbread – which is what I was really looking forward to! – was quite blah; a bit too greasy and stodgy :( I had about 1/2 of one piece, and then a forkful of Hannah’s baked beans. The dressing tasted like mayo so I didn’t really have any, and I don’t like green beans…the tuna was amazing though! As was the company:

After that, we went to see Dear John, with two new editions added to the party: Ben and Jerry!!!

Good times. I think Fairly Nuts is my new favourite flavah!!!

The film was good too – I thought it’d be better than it was but it was well worth seeing for two reasons – a) Channing Tatum. Good lord. BODY OF A GOD! And b) I almost cried about 6 times :D Nothing like romance to get the tears pumping!!

Then, we picked up my mum from her night out on the town with the girls (she was rather drunk, and was hung over this morning :p) and drove home. So overall: Blah food, pretty good film, but AMAZING company! My sister and I talked loads and it was lovely; better than any normal date :P

OK, now onto today! I’ll make it brief, seeing as I’ve raaaaambled for a long time already!

I had 1/2 glass of smoothie and 1/2 glass rice milk, and ate a big old Nakd bar pre-run (it had a good hit of 38g carbs- just what I needed!!).

I did 8miles in 1hr6 :) My splits were as follows:

8.20, 8.21, 8.06, 8.08, 8.11, 8.16, 8.17, 8.23

It was a good run! Though I stopped at mile 6 to have a drink, straightened my arms, and OUCH! I was so sore from my fall yesterday :( Bah well!! My legs and lungs were fine, so that was the important bit.

I was going to have chocolate oatmeal, but I was SO hot when I got inside, I needed something refreshing – so this was made with frozen banana, not normal, and it was PERFECT.

Lunch started with a salad – salad leaves, tomato – with stir fried mushrooms, red onion and courgette (fried with balsamic and agave), and basil tofu:

Then for carbs, I had a cinnamon raisin bagel, half with banana peanut butter, and 1/2 with Amazake and almond butter, followed by 2 squares of chocolate for dessert :)

In the afternoon, I was going to bake cornbread, but Hannah needed help with Tig, so I did that instead :) What a good sister I am!!

I was totally ready for some snackage when I got in – hot chocolate and some So Crispy bites:

Made with 1/2 block sheep’s milk cheese, 1/2cup oats, sqaush, red onion, cinnamon, garlic and parsnip. I was about to eat it, then I spied some almonds, so I added them as a garnish :D

It was sososososo yummy, I’ve missed it so. Plus I feel like I’ve made up for my lack of carb at dinner last night (half a piece of cornbread just doesn’t cut it – I felt the difference running this morning). Cereal, bagels, oats…the sport’s nutrition books would be proud!

For dessert I’ll probably just have some natural yogurt with the last of my Amazake (I really REALLY don’t want to finish that stuff :( ), with a hot chocolate and a square of dark.

Persistence Pays Off

How is it Thursday already!? Seriously, where has this week gone??

Bah well – it means Saturday is a bit nearer, and I have a feeling Britain’s Got Talent begins this Saturday….excitement!

Thank you to everyone who commented on my last post, re The Dairy Debate – I really appreciate all the input and I read each and every comment in detail. It’s such a difficult subject; I’ve read books that have said the whole ‘we need dairy’ thing is just the result of a big government money motivated thing from the 1970s, but I’ve read other stuff where it’s made out to be vital. I think, for now, I’m going to continue eating dairy (except cow’s milk – I don’t like it!) but make sure I know where it’s come from – so locally sourced yogurt from reputable farmers, that kind of thing. My mum has also decided to only buy organic milk now, after we talked about it :)

Ok – now onto today!

Well, last night actually – dessert was natural yogurt with Amazake topping (and a hot chocolate and a square of dark chocolate):

Today started with a glass of smoothie, an apple and a square of dark chocolate:

I’ve never had that sort of Innocent smoothie before (I don’t like ginger!), but it was really good!! The ginger was subtle, so I could cope :P I hate to admit it, but it was actually quite pleasant :P

I then went out for my run – now, naughty NAUGHTY Garby! She came back to life yesterday, but was misbehaving today. I paced my yard for 10mins waiting for her to get signal before I gave up and ran anyway. Somewhere in the middle of my run (20mins in maybe?), she suddenly found some! What a temperamental gadget.

Anyway, I think I did about 4.5-5miles (the two miles she did record were about 7.53 pace) in 39mins – I think I was going faaaairly fast.

When I got back, it was Green Monster time! In the mix: 1/2 cup All-Bran, 1/2 cup Quinoa O’s, 1/2 cup milk, 1/2cup coconut yogurt, spinach, and a big tbsp cocoa powder. Sprinkled with dried cranberries/blubes, Fru-Grains (tree bark!) and granola:

It was a FAB bowl – the cocoa was subtle, but very much there. LOVED IT! I recommend you try that combo :)

After breakfast, I rode, took some crazy cat pics (which are coming up later!), did 10mins abs work, then made lunch.

Inspired by Caitlin, I made sweet potato flax balls! I just baked a sweet potato, mashed it with a spoon of apple sauce and cinnamon/garlic, then shaped it into 3 balls, and rolled them in 1/2tbsp flax and 1/2 tbsp oatbran:

Twas then baked for 1/2 hour, along wit some squash wedges, leek and pasrnip.

I also marinated 1/2 a tempeh block in a tsp of date syrup, paprika, pepper, garlic salt and soy sauce:

SUCH a good lunch! My tempeh marinade was super, and the balls were LOVELY! They developed a kind of caramel like taste…maybe it was the flax getting a bit charred? Whatever it was, it was wunderbar :D

Dessert was two Booja truffles – I LOVE THEM SO!!!

Then I started to feel skank in the afternoon :( My mum was ill the other day, and I think I might be getting what she had, which sucks! My tummy was feeling horrible :( To try and settle it, I had a tiny apple, and then later on, a vanilla soya yogurt with some Nature’s Path cinnamon/blueberry, and a hot chocolate:

Dinner was very dull – I just felt gross so I wanted something really comforting. Four cheese tortellini it was :) with squash, parsnip and broccoli, and balsamic (we have a limited veggie selection atm!):

While I was riding today, I was thinking about persistence; Chika and I have come a long, long way since I first got her in February 2005. In our first year together, we spent more time unintentionally flying through the air (Chika has a fabulous buck!) than not….in fact, I remember one particular day in Feb 2006. I’d just been bucked off, and was crying in my room. My mum came in, and said ‘what are you thinking?’ My reply was ‘In one week, I’ll have had Chika a year, then I can finally sell her!’ That’s how bad it was!!

But, I persisted. I kept up with her schooling and hacking and we started to improve. When we bought her, Chika couldn’t canter a circle (she was very. very unbalanced) and was basically only just broken in. But by the end of 2009, I’d accomplished my ultimate horsey goal with her – a placing at the elementary regional championships (it was third championship lucky for us :D )!! We beat loads of fancy expensive horses that came in these giant horseboxes pretty much lined with gold…I was so proud! It just shows what you can achieve if you persist.

So why am I rambling about that? Well, I think it applies to everything – overcoming an ED, losing weight in a diet, mastering a recipe, kicking ass in an exam, learning French – whatever it is, and no matter how crap it can be, I think if you really persist at something and stick it out – it’ll pay off in the end.

It’s now been almost two years since I was first started treatment for my ED, and it’s only been the last few months (basically since I started this blog!) that I’ve really felt I’ve done it. In that time, there’s been so much frustration and wanting to give up cos of the slow progress, but I feel my persistence is paying off now! I’m stronger than I’ve ever been (pre and post ED!) and I’m enjoying food and exercise more than ever before. I even have my marathon coming up…and knowing how well I can do when I do stick at something makes me all the more determined to persist and KICK SOME MARINE CORPS ASS in October!!!

I’m hoping I can add my marathon to my list of proudest things :D (So far, it has: overcoming my ED, and getting placed at the regional championships) What are your proudest achievements?

Have you ever had to really persist at something to achieve it? Was it worth it?

Well well – HAPPY HUMPDAY BLOGGIES!! How’s it going?

I’m going to begin by taking a step back in time, to my wonderful dessert last night – a hot chocolate and the last of my cottage cheese, mixed with a whole lorra Amazake:

Gotta say, I’M IN LURVE WITH THAT STUFF!! It’s grown on me and I want more :P

Now onto today:

As soon as I got up I had a glass of vanilla rice milk and an apple, then shredded myself for 25mins, with my BFF Jillian. Breakfast was oatmeal :D In the mix: 1/2 cup oats, 1 cup milk, 1/2 banana + a small reaaaally soft ripe pear, cinnamon. At the end, I stirred in coconut yogurt, and topped it with apple sauce, dried cranberries and blueberries and granola:

Best bowl I’ve had in a while!! (Looks like an egg ha!) The cranberries with the coconut was FAB! And the pear/banana mix worked much better than pears on their own (I must remember that…).

After that I worked, rode (it was tres cold and miserable today :( ), then did another 23mins of DVD workouts. Weirdly, the oatmeal didn’t hold me over as it normally does, so I had a pear before my 2nd workout – I demolished that beast:

Then, lunch! I seem to be on a coconut kick at the moment, cos I made Parsnip, Leek and Coconut Soup!

I started by softening leek and garlic in avocado oil, with cinnamon, desiccated coconut, oriander and lime juice. Then I added in about 180g ish chopped parsnips, and cooked for a few mins:

Then I put in enough stock to cover it nicely:

I let it boil away til the parsnips were cooked and soft (and I also added in some spinach, on its’ last legs…), then blended. After it was blended, I stirred in some more lime juice, and a hefty dose of my coconut yogurt, then garnished it with coconut sprinkles :D

So tasty!! It just worked really really well. HOORAY!! Hardly the consistency of a traditional soup…but who cares, it tasted GOOD.

I also had some smoked salmon for mah proteen hit, and a piece of toast spread with almond/peanut/hazelnut butter, AND a Fakd ball :D

For my afternoon snack, I had a date and coconut muffin (remember when I made them a while back? Praise be for freezers!) hot from the microwave and spread with a lil bit of Amazake:

The dates went all treacle-like…delicious! I also had my usual hot chocolate.

For din dins, I marinated some tempeh in Japanese rice vinegar, soy sauce, cinnamon, garlic salt and agave:

And the stir fried, along with broccoli, aubergine, leek, garlic, spinach, shallots and butter beans:

At the end, I added in some cooked squash and left over parsnip, then topped it all with a sprinkle of soya nuts for crunch, and BOB’S YOUR UNCLE! Meal complete :D

So, I stumbled across this website yesterday – www.earthvegan.blogspot.com. This lady has some incredible vegan recipes on her page! I mean literally, there are a gazillion or so…everything from fat free brownies to apple cake to curries and aloo gobi (I don’t know what that is either :p).

I was just looking through her pages, when I came across a video on this page. Now, I’ve heard a lot of bad things about the dairy industry, but this video in particular really hit home – I’ve read about the issues it mentions, thought about them, but that’s as far as it’s gone. However, I’m now really seriously considering giving up dairy for good. I already avoid milk – I use soya – but I eat a lot of yogurt…that is the thing I’d find really hard to give up (you all know about my 2% Greek yogurt addiction right!?). Are there any vegans/non-dairy eaters out there? Do you miss any dairy products? What do you use as a replacement?

Dairy products seem to play such a big part in my daily eating (heck, just yesterday I had yogurt as a snack and in cooking!), but I feel terrible that I’m supporting such a horrific industry. I don’t think getting enough calcium would be a problem, as soya has some anyway, as well as all the spinach etc I eat (it’s just the yogurt…argh!)

What are your thoughts, good and bad? I’d like to hear as many opinions as possible, before I make an official decision.

In other news! I am prepping a post about my recovery from my ED, but it’s taking aagggeess (you’ll see why when you read it!) so bear with me :)

Do you ever eat with your family?

I do very occasionally, but we’re all on different schedules (so eat at different times) with different tastes!! My mum for example, would love to eat fishcakes with potatoes, sugar snap peas and green beans – I hate all those foods!! But on weekends, I sometimes cook for everyone and we all have it together :)

Gah at the Garmin/ Coconut Fest

BEHOLD!

DISASTER struck me today! Yes…one of my worst nightmares happened – my Garmin 305 has died. I’ve had it for about..ooh, 2months, maybe 3? I put it on my wrist this morning, tried to turn it on, and nothing; no welcoming beep or anything. So I plugged it into the laptop to see if I’d accidently let the battery die – NADA. Laptop didn’t even register I’d plugged it in! I am seriously gutted :( That thing cost a bomb, and it’s broken already! I’m assuming it’s under guarantee or something, but all the box and stuff is at uni. GAH.

I still soldiered on though, and somehow I’ve managed to get through the day….though once again, sorry for just one post – it’s kind of easier to work in the day, and post in the evening when my concentration is on the brink, so I might stick to this til my exams are over :s

ANYWAY!

My day started like this:

My first taste of vanilla rice milk, and a big coco loco Nakd bar (and an unpictured tsp of Amazake).

My verdict – I don’t really care for rice milk, it has zero flavour! Not a patch on the vanilla soya. But I knocked it back cos I had a groovy run planned :)

I did approx. 8miles in 1hr10 (maybe just over? Who knows, I had no Garby), but I took a different route today and ran in the forest for about 4miles! It was SO FUN! I was totally inspired by my Ultimate Heroine who did a 15mile trail race the other weekend, so I thought I’d give it a go. I think my joints appreciated it cos the ground was so much softer. Plus, it was just nice to have a different view with lots of dips and hills :D The only downside was a) the nasty stitch/cramp I got for a bout 3 miles, which I have NEVER had. Moral of story – don’t drink rice milk before run. And b) The last 2miles home was running straight into a heavy wind…tough going! I was quite tired at the end of it all, but I loved it :D

For breakfast, it was all about the Green Monster again :P Something about a GM after a run…they seem to go together, like Brad and Jen (at least in theory). My GM this morning contained: 1/2 cup milk, 1/2 cup Amazake, 1/2 cup Quinoa O’s, 1/2 cup All-Bran, looooaads of spinach, a small banana + 1/3 of a frozen banana; all topped with granola and Tree Bark:

I worked for a bit, then did 10ish minutes of abs work (I’m not ashamed to say that I OWNED side plank today, minus Carter standing on me), then decided I had to bake!!

But I made up my own recipe. See I was thinking how Nakd/Trek bars were such super fuel, then I saw my dwindling stash – so I thought I’d make my own version! I spent a good 20minutes studying the ingredients of my favourite bars, and came up with the following mix:

  • 145g pitted dates
  • 60g banana
  • 60g almonds
  • 60g oats
  • 20g soya nuts
  • a splash of agave

Basically, I threw it all into the blender, and spent about 4years processing it all, til it looked like this:

Then, I tipped the mix out and shaped it into little balls and chilled them:

Voila! I give you….*drum roll* Fakd Bars!!!? I believe I deserve huge amounts of prestige and respect for that name – a combination of my name (Freya), Nakd, and the fact that they are basically fake Nakd bars…I FAKD them :D Genius, no? I had one as my lunchtime dessert:

Oh yeah, and actual lunch! Kinda thrown together cos I was blending, but it was smoked salmon, squash wedges roasted with cinnamon and garlic salt, roasted leek and aubergine with the same, as well as some agave nectar, with a side of toast – spread with almond butter, hazelnut butter and peanut butter!!

After lunch, it was work and horses and cute kitten picture
s (you’ll see them tomorrow :P ). For my afternoon snack, I had some Bear Tropical granola nibbles with some coconut yogurt:

As well as a hot chocolate :)

For dinner, I attempted to have creativity!

I started by boiling some parsnip and cauliflower in a tinnnyy amount of water, which I then mashed with some coconut yogurt, seasoned with lime juice, coriander, garlic salt and soy sauce.

Then I fried some garlic and a shallot with half a block of pre baked soy-sauce covered tofu, then added in some more coconut yogurt with the same seasonings:

I also had roast broccoli and butter beans – all together:

It was tres gut! The lime and coconut together was obviously fab (cos it’s a ‘thing’ isn’t it?), but with the added saltiness from the soy sauce..mmm, loved it!

Yet again, I seem to have written a verrry long post, so I’ll leave it there – but tomorrow, I’ve got lots of good things to come; kitten photos (it’s been a while hasn’t it!!??) and I’ve had a number of requests from people that want to find out a bit more about how I overcame my ED, so I’ll try and do a post about that too :D

How similar are you and your sister? Do you ever have tiffs?

Aaah Hannah and I….we’re not really that similar at all! We’re 17months apart (she’s older), but we have completely different personalities! Saying that though, she’s one of the funniest, loveliest people I know, and she has a very big heart – she always knows how to cheer me up if I feel crap (usually with stupid youtube videos!). BUT when we fight, we really fight!! Thankfully not as much as we used to, and not over such petty things (she once chased me down the garden screaming cos I tried to eat the last yogurt – so I threw it at her!), and the older we get, the less we fight.

Does anyone else have brothers/sisters? Do you fight with them much? I swear, there is no fight that can rival a sibling fight, cos you know the EXACT buttons to push to get a reaction :P
