Who needs pumpkin?

Filed in Uncategorized |I always get so jealous when I read American blogs, and they add pumpkin to everything – soup, oatmeal, baking…everything – and it sucks cos you can’t get it in England! Well, I found a website that stocks American food, and it was £2.50 for a tin…with £4.50 P + P! SO exspensive! So I decided to make some homemade pumpkin puree, but I only had butternut squash, so I used that instead
But before I get to all that – no run this morning! It was icy and snowy, but apparently it’s going to be sunny today and even sunnier tomorrow, so I’m hoping the snow will have melted and I’ll be able to run
So I woke up to a square of chocolate, tbsp of wheatgerm, and I made Hot Banana:
Looks appetizing doesn’t it!? It was proper delicious! (By the way, banana rhymes with Obama – which I think means you all need to see a photo of the one and only -)
I then did part 3 of Gillian’s 30 Day Shred, and 2 short sections from 2 other DVDs – it was a good workout
I then made Squashed-Up Oatmeal!
I started by baking a whole load of squash til it was soft:
Then I peeled off the skins (and ate them
), and mashed it all up:
I cooked up my usual til it was 3/4 of the way done (1/2 cup oats, about 1.5cups ++ milk, lots of cinnamon), and stirred in the squash – about 1 cup. I also added a dash of agave:
It looks like scrambled eggs!
The finished product was SO tasty! I sprinkled it with a load of grape nuts:
Prapper good food that was, I’ll definetly be doing it again! Although the volume was no different to when I add in banana, it was a lot more dense with the squash; I felt like I had a very large food-baby after that! And it held me over really well – when it came to lunch, I was still so full! But I couldn’t delay, cos I want to cook some blackberry and banana muffins later, and I really want to have room to try one
So lunch was nice and simple and vegetarian. I had 2 quorn fillets, a 1/2 can of red kidney beans in a spicy chilli sauce, roasted sprouts/broccoli/mushrooms (roasted in soy sauce, olive oil spray and pepper) and some spinnnarcccccch:
It was a looovverrrly combination, but very chilli-like! I needed a nice palate cleanser – enter an orange cut up with some papaya and a tbsp of grape nuts – I seriously can’t get enough of them!
Gosh my internet is so slow right now…it’s taken me half an hour to load up those last 3 photos! So now I’m very behind with my day…back later! Muffins and pizza to come

oh no, you can’t get pumpkin where you live?? the horror! i guess that settles it, i must remain in the states then
. great alternative you used though, squash is squash!

Nope, not anywhere! I know of one supermarket that stocked it, but they stopped last year
It’s only American shops online now…but it’s too exspensive there!

Squashed oats – amazing!! Thicker than with a banana, but still brill
Hot banana is easy; I just slit a banana (in the skin) a few times, then microwave it on high for 2 or 3mins, flipping it over halfway, til the skin has gone really dark and the inside is mushy. Then just scrape it out and it is DELICIOUS!
